We may be geeks, but that doesn’t mean we don’t know how to create great things in the kitchen. Some of the best dishes can be made quickly and easily as long as you know what you’re doing. Let’s get cooking!

Sometimes, a great meal can come out of a complete lack of having anything else to eat. That happened to me the other morning when I looked around for something to have for breakfast. I was hungry and nothing was piquing my interest.

So, I decided to improvise, throwing together a bunch of disparate foods onto a plate. Breakfast nachos sounded like a great idea. And they came out delicious!

Of course, if you’re going to have nachos, you need to have some chips as your base. I did not have any chips for my base, so I had to make them myself. It’s a pretty easy process, and I’ve detailed it HERE, but that was before I had a deep fryer. And it’s much easier now. So I warmed up the oil in the fryer, cut the corn tortillas I had in sixths and dropped them in, getting them to a nice crisp before putting them in a bowl over a paper towel to drip off the oil.

While I was making the chips, I also drained a can of black beans in the sink, then put them in a pot on the stove over low temp to warm up. Can’t have nachos without black beans.

With the beans warming and the nachos cooling, it was time to make some eggs. I went with scrambled eggs mixed with frozen spinach. I cracked two eggs into a mixing bowl, added a dash of milk, a handful or two of frozen spinach and seasoned the eggs with salt, black pepper and garlic powder. As the eggs were cooking in the pan, I threw some shredded cheddar cheese on top for good measure.

Spread your chips on a nice plate and once the black beans are done, scoop them up and toss them on top. Next comes the scrambled egg over top, with some more shredded cheese for good measure. Some salsa finishes off the combo, and some sliced avocado on the side makes the perfect accent for a delicious breakfast!
