We may be geeks, but that doesn’t mean we don’t know how to create great things in the kitchen. Some of the best dishes can be made quickly and easily as long as you know what you’re doing. Let’s get cooking!

I like to make quesadillas for breakfast, a simple way to start the day with a filling meal. Usually, I just make them with cheese, but every now and then, I like to expand the palette a bit and add some meat to the mix. This time around, I wanted to add some steak to the mix.

Steak

First things first, obviously, chop up your favorite cut of meat, throw it in a pan over medium heat and season as you like it. I put black pepper, garlic powder, onion powder, crushed red peppers and a little bit of hot sauce in the pan to flavor the steak. Once the steak is cooked, you can focus on the quesadillas.

tortillas w cheeseRemove the cooked steak from heat and take a griddle to a medium flame and place some corn tortillas there. For this meal, I have a package of Guerrero corn tortillas, but the brand really isn’t all that important. Warm them up a little bit and then flip them over. Throw some hot sauce over the tortillas for a little bit of a kick.

Once the tortillas are seasoned with the hot sauce, take some finely shredded cheese of your choice – I usually use Mexican or taco cheese here, but a good pepperjack or other flavor of cheese could also be good. Again, it all depends on your taste and how you like your foods.

My wife decided she wanted the steak on the side when I made these, so once the cheese is on the tortillas, fold them over and let them cook a bit. Then flip and do the same to the other side. Once the tortillas have been cooked to your liking, put them on the plate, throw some hot sauce on top – we’re using Valentina’s extra hot sauce – and add some steak to the side.

Of course, if you want to have the steak INSIDE the quesadillas – as is more common for what are called steak quesadillas – you should put the pieces of the chopped steak in the open faced tortillas once the cheese has started to melt. Fold them over and let them cook a bit, then flip.

Once the tortillas are cooked and on the plate, I like to put some sour cream on the side to use as a dip for the steak quesadillas.
